5 Low-Waste, Skinny-Waist Recipes

Going vegetarian or vegan for one meal per week is a common green tip. But for some, presenting a meat-free meal to the family can seem like a daunting task. How do I make it? Will they like it? Will I like it?

Try to shake those visions of granola and unhappy faces around the dinner table because vegetarian food doesn’t have to be blah or boring.

As a lifelong vegetarian, I’ve had plenty of time to test out some recipes in my own kitchen. And I’ve hand-picked five favorites for you to try in yours. These meals aren’t just meat-free. They’re also low-waste and low-fat – so you can shrink your footprint and your waist size.

    This sounds really a great idea, going vegan for one meal per week. Family with children should really try it. It is a healthy way to treat your family and plus will introduce children to a variety of fresh vegetables.

    Not sure about shrinking my waist size, although I'd like to, but most of the ingredients in those recipes I don't like, anyway: avocado, couscous, guacamole, spinach. YUCK! >:p However, the linguini recipe sounds good. Love linguini, love asparagus! YUM! :) The rice and beans (if they're black beans) burritos sound good, too, but only if you leave out the guacamole.
