3. Bananas
These tasty fruits are a perfect on-the-go snack and a healthy addition to any child’s lunchbox. But those icky brown patches are a little less than appetizing. To get more from your overripe bananas, try making some tasty muffins for Sunday breakfast or an after-school treat. The recipe is so easy the kids can even help out.
Banana Nut Muffins Recipe
What you’ll need:
3 bananas, mashed
1½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
¾ cup of sugar
¾ cup of walnuts
1/3 cup of butter, melted
1 egg
A pinch of salt
How to make it:
Preheat the oven to 350 degrees. Combine the flour, baking soda, baking powder and salt and set aside. Combine mashed banana, sugar, egg and melted butter in a large bowl, and gradually stir in the dry ingredients. Add the walnuts and stir until smooth.
Coat your muffin pan with a nonstick spray or use liners, and carefully scoop your mixture into the pans. Pop them in the oven for 20 to 30 minutes or until muffin tops are brown, and you’re ready for breakfast.
