5. Cucumbers
The saying “cool as a cucumber” doesn’t really apply if the cukes are going soft. While cucumbers that are starting to get slimy are better off in your compost pile, there are loads of uses for less-than-fresh cukes, like this tasty relish that you can keep in your fridge for months.
Classic Cucumber and Onion Relish Recipe
What you’ll need:
3 large cucumbers, peeled and chopped
3 large onions, chopped
1½ cups white vinegar
1½ cups sugar
1 teaspoon salt
How to make it:
Place your chopped cucumbers and onions into a glass mason jar. In a medium-sized bowl, combine vinegar, sugar and salt. Pour the liquid over your cucumbers and onions, and let sit in the refrigerator for at least three days before serving. This tasty pickled classic can keep in your refrigerator for at least two months and up to a year. If the cucumbers start to darken, it’s time to throw it out.
