5. Carrot-ginger soup

Spice up carrots with ginger and coriander with this winter soup recipe recommended by I Adore Food blogger Alexandra.

Serves 4
What you’ll need:
2 ½ cups carrots, diced
1 cup celery, diced
1 full onion, diced
2 garlic clove, chopped
1 tablespoon fresh ginger, grated
½ cup rice
5 cups of chicken or vegetable stock
1 tablespoon olive oil
Fresh coriander, to taste
How to make it:
Put a large pot on medium heat; once the pot is hot, add olive oil. Then add onions, garlic and ginger, and cook until onions are tender.
Add in carrots and celery, and keep on medium heat for 5 minutes. Add the stock and rice, and bring to a boil.
Lower the heat, and let simmer for 30 minutes.
Then purée the soup using a hand blender or food processor. Add as much fresh coriander as you want and serve.
Tips to reduce waste: Buy rice in the bulk food section of your grocery store, and use your own small cloth bag to transport it home. Avoid produce wrapped in plastic wrap by purchasing loose vegetables in the produce department or at the farmers market and using your own produce bags.
Rather than buying vegetable or chicken stock in a can or carton at the store, use leftover veggies to make your own stock or leftover chicken bones and skin to make your own chicken broth.
Compostable waste: Onion and garlic skins, tops of carrots and celery.
Recyclable waste: Paper packaging for rice, can or carton of stock.
Trash: Plastic packaging for rice, carton of stock if not accepted by your local recycling program.
